奶昔小屋 (Shake Shack)

最近走過 Madison Square Park, 才猛然發現這令人期待整個冬天, 只有在夏天才營業的 Shake Shack 已經悄悄的再次成為最受歡迎的紐約客午餐地標. 中午休息時間的麥迪遜公園, 可是人聲鼎沸, 熱鬧極了.

Shake Shack 是 Danny Meyer (Union Square Hospitality Group 的老闆, 在紐約有很多家餐廳, 包括 MoMA 裏的 The Modern) 的最新寶貝, 專賣熱狗ˋ漢堡薯條和奶昔等適合在公園裏吃的各式美食. 菜單上有兩種有趣的項目:Frozen Custard 和 Concretes. Concrete 不是混凝土嗎? 我是不是記錯了單字的意思啊? 其實沒錯, Frozen Custard 是我們常吃的霜淇淋, Concretes 則是將霜淇淋冰的比較久 比較硬, 然後用機器高速再次攪打並加入喜歡的配料, 口感比較綿密紮實. 這個名稱和霜淇淋是不是在口感上絕配的對比形容呢?

找個好天氣的中午, 來這兒體會一下在公園與小松鼠共享一餐的樂趣吧! 或是傍晚下班後, 公園不再那麼紛擾擁擠, 和三五好友相約在此, 喝杯小酒(可以在一個特訂的區域裡, menu 裏有啤酒和葡萄酒), 看人和被看, 不禁讓自己回家的腳步變的輕盈起來.

蔬菜凍 (Vegetable Terrine)

什麼是 Terrine? 今天我們常在法國餐館裏見到的一種菜名, 其實是一種傳統的法國蒸煮容器, 同時也是法國菜的一種特殊烹調法, 主要是將魚、肉、蔬菜等先行調味, 再放入長方型模型中(就叫Terrine)填實, 蒸煮定型, 食用時切片再淋醬, 統稱為法國派、手工餡餅、肉凍或蔬菜凍, 如果由水果做成的甜點, 則叫水果凍.

Terrine 看起來似乎很複雜, 其實不然, 只要一步一步的跟著食譜的步驟進行, 其實一點都不難, 只是要有一點耐心, 按步就班, 不能亂了手腳. 沒有這種特殊的容器並沒有關係, 可以用長方步型的蛋糕模代替, 效果一樣是很好的.

Terrine, it's the name of a dish on many restaurant menus nowaday, but its original meaning is the name of an earthenware cooking dish, or a French cooking method which cook all the ingredients in the mold, and serve it sliced with some sauce. It could be made by meats, like Pate, or vegetable, like this one, or even in dessert, like fruit terrine.

It looks very complicated to master, but it's an easy and simple one to make if you follow the recipe step by step. It is not necessary to buy a mold to make the terrine. A loaf pan works just as well. All you need to do is blanch some vegetables, steam few carrots and mash them into puree. Layer them all in the mold in some order. The big WOW factor for your guests will worth all the work you did in the kitchen.

酸奶巧克力Bundt蛋糕 (Chocolate Sour Cream Bundt Cake)

什麼是 bundt cake 呀?? 在台灣, 很少見到這種甜點, 其實它只是一種圓環狀的常溫蛋糕, 吃起來口感類似 磅蛋糕(pound cake), 紮實而且帶有濃濃的奶油香, 是常見的美式甜點.

這份食譜是刊登在 Cooks Illustrated 雜誌, 在材料的選擇上, 特別選用了淡色細紅糖(light brown sugar) 和酸奶一起搭配, 所以蛋糕吃起來, 口感鬆軟, 不會太乾;在巧克力的材料選擇上, 選用了苦甜巧克力加上可可粉, 使得巧克力的滋味更加濃厚.

另一個秘訣是將常溫下的奶油和少許的可可粉混合均勻, 然後均勻的刷在蛋糕模內, 不但蛋糕容易脫模, 更增添了一層巧克力的美味.

Using both cocoa powder and bittersweet chocolate, make this cake full of chocolate flavor; sour cream and light brown sugar, make it super tender and moist.

The new trick is mixing softened butter and cocoa powder to brush the bundt pan!! It worked beautifully!

充滿濃烈香氣的草莓 (Tristar Strawberry)


夏天的 greenmarket 裏, 偶而可見這種小巧可愛卻充滿濃烈香氣的 Tristar 草莓. 美國的草莓, 大約分為 June Bearing 和 Everbearing ( 又稱為 Day Neutral ) 兩大品種, 而 Tristart 是屬於後著.

這種草莓的產量並不多, 通常 farmer 還來不及把它整齊的擺在攤位上, 就已經被早早趕來的甜點大廚一掃而空, 因為這種草莓果肉多汁, 香氣濃烈, 而且大小很一致, 最適合在甜點中使用;不管是水果塔中的裝飾, 或是製作過後的慕思或醬汁, 都還能夠保持濃濃的草莓原味, 可以說是甜點大廚心目中的理想食材.

我在 Craft 工作的時候, Chef Karen 教我用這種草莓做了果醬(Preserve), 果然不同凡響;雖然經過烹煮, 但色澤依然鮮艷, 留在嘴裏香味久久不散, 真是令人難忘. 不知是 Tristar 草莓好, 還是老師製作方法高明? 下次若是讓我再次遇到這種真貴的草莓, 一定要好好的把握機會, 享受一下 Tristar 草莓的真正滋味.

好吃又容易做的名廚食譜 (Jean-Georges: Cooking at Home with a Four-Star Chef)

這本食譜擺在書架上沾灰塵已經很久, 實在有一點想不起來當初是因為其中哪一個食譜而衝動買下來, 也許是因為裡面有一個在 1998 年和 1999 年最紅的甜點吧, 我們叫它巧克力火山蛋糕, 也就是那種熱熱的, 中間還是液體狀的巧克力蛋糕. 這可是世界聞名的大廚 Jean Georges Vongerichten 的招牌甜點, 當時紐約的每一家的甜點菜單都有這一道, 甚至連數一數二的日本餐館 NOBU 都有這道甜點, 可見受歡迎的程度有多誇張.

我對於這種名廚的食譜書一直都存有疑問, 不知我們這種家廚, 在家照著食譜一步一步做, 會不會成功? 還是這些衝動之下買的美美食譜只可以擺在茶几上純欣賞? 在 2004 年的聖誕節, 我就選了幾個這本書裡的食譜來試試, 結果大大的令我滿意!

Cookbook: Jean-Georges: Cooking at Home with a Four-Star Chef by Jean-Georges Vongerichten & Mark Bittman.

This cookbook has been on my bookshelf for quite a long time, I did not remember when I got this book and why? Maybe it just because of Jean-Georges’s most hit dessert in 1998 and 1999, warm chocolate cake. I always have a question about those big names’s chef’s cookbook: will we home cooks be able to produce the same dishes at home with recipe instruction? Are those beautiful photographed cookbooks are coffee table books? It’s only for show, and not practical at all? I test a few recipes from this book, and the results are all great!! The instruction was written clearly and easy to follow, and the results look like the photo which shown in the book. What a relief due to my overflow bookshelf, this cookbook is a keeper!
